UPDATE. It turned out to be a faulty iPad with defective audio circuitry that resulted in quiet recording from the built in mic and distortion from the external mics.
After experiencing some random distortion issues with the iPad I use to record most of the workbench videos I decided to try external microphone options. You can assess the results for yourselves. I thought they were a bit fierce.
